This last year's olive oil, still available in 3L tins, it has another good year of shelf life if kept in proper conditions: cool, dark, oxygen-free. The tin takes care of the dark and oxygen free, so keep the tin in a cool basement and it will keep just fine. When you open the tin, it is recommended to rebottle all of it to keep the oxygen exposure low in the unused portion, unless you go through the 3L within about a month.

Olive oil is produced immediately after harvest just once per year, so you may wish to purchase A YEAR'S SUPPLY or, at least purchase enough to maximize your shipping costs.
To receive the health benefits of highly active polyphenols and anti-oxidants of FRESH OLIVE OIL, you'll want to use this new 2020 olive oil for all NON-HEAT PURPOSES like salad dressings, dipping bread, or drizzling on soups and stews. Our favorite way to use this wonderful olive oil is to make SALAD DRESSING! It can be as simple as 1/4 cup Olive Oil, 2-3 tablespoons of red wine vinegar or lemon juice, 1/4 teaspoon salt, and 1/8 teaspoon pepper (season to taste). With Manetas Olive Oil, this is delicious without anything more, although adding some fresh or dried herbs (like 1/2 t Oregano) is wonderful, too. ++
